Here's a low-cal taco salad recipe that I got when I used to go to Weight Watchers meetings: Quick & Big Taco Salad Lettuce (2 cups or as much as you want) chopped up 1 medium tomato, diced 1/2 cup (or more) salsa 1 Smart Ones "Fiesta Chicken" dinner Cook meal according to the package instructions. Toss lettuce & tomato and top with the salsa and cooked meal 6 points You could also use: Smart Ones "Southwestern Chicken Bowl" dinner OR Smart Ones "Santa Fe Rice & Beans" dinner For an extra point or two, you could crush a few torilla chips to add to the salad. When I do this, I put them on the plate/bowl first, then the lettuce.

Here's another lite but filling recipe I got at Weight Watchers: Summer Melon Salad 4 c. diced canteloupe 4 c. diced honeydew melon Combine 3 (6 oz.) sugar-free, fat-free vanilla yogurts, 2 tsp. honey, and 2 tsp. lemon juice. Pour over fruit and serve. Serves 8 <14 pts. total or 1 3/4 pts. for 1 big cup> Substitutes: 4 sliced peaches, 6 c. strawberries

No Thanksgiving or Christmas at our house is complete without: CRANBERRY CHEESE RIBBON SALAD 1 env. unflavored gelatin 1 c. cold water 1 (3 oz.) pkg. strawberry Jello 3/4 c. boiling water 1 (14 oz.) jar cranberry orange relish 1/4 c. lemon juice (2 sets of 2 tbsp.) 1 tbsp. grated orange rind 1 (8 oz.) pkg. softened cream cheese 1 sm. container Cool Whip (4 oz.) In small saucepan sprinkle gelatin over cold water to soften, heat and stir until gelatin dissolves. Remove from heat; set aside. Stir strawberry Jello in boiling water. Stir in relish, 2 tablespoons lemon juice and rind. Pour into lightly oiled 1 1/2 quart mold. Chill until slightly thickened. In large mixing bowl beat cheese and remaining lemon juice until fluffy, blend in Cool Whip. Add gelatin mixture; mix well. Spoon evenly over cranberry mixture. Chill 3 hours. Unmold and garnish. (Or just spoon it from the mold if you aren't worried about being fancy.) Refrigerate leftovers. I use this Tupperware mold, with the tree for Christmas:
