Quick Strawberry Pie In saucepan: 2 scant c. water 1 pkg. sugar-free Cook & Serve vanilla pudding <not instant!> 1 pkg. sugar-free strawberry jello Bring to a boil <after adding pudding and jello!> until foamy. Set aside. Wash and hull 4 c. fresh strawberries. Place in a graham cracker pie crust. Pour hot mixture over. Chill. Whole pie is about 18 points; 8 slices are 2.5 points per slice. Substitutes: peach or raspberry I've served this for people without telling them it was "diet" and they liked it and were surprised to be told that it was "diet". It's really sweet.

Chocolate-Peanut Butter Pie 3/4 c. nut-like cereal (divided) 2 c. chocolate low-fat ice cream (softened) 1 (2.1 oz.) pkg. sugar-free instant chocolate pudding mix 1/4 c. creamy peanut butter 1 c. frozen fat-free whipped topping (thawed) Sprinkle 1/2 c. creal in bottom of 8" round pan. Combine remaining 1/4 c. creal, ice cream, pudding mix, and peanut butter into prepared pan. Cover and freeze 2 hours. Let stand at room temperature 5 min. before serving. Top with whipped topping. 8 servings <4 points per serving>

JIF Peanut Butter Pie Ingredients 1 prepared chocolate cookie pie crust 1 cup JIF creamy peanut butter 8 ounces cream cheese (at room temperature) ½ cup sugar 4½ cups of non-dairy whipped topping, divided 1-11.75 ounce jar hot fudge ice cream topping, divided Directions *In a medium bowl, beat together the peanut butter, cream cheese and sugar. Gently fold in 3 cups whipped topping. Spoon mixture into the pie shell. Using a spatula, smooth mixture to edges of pie. *Reserving 2 tablespoons of hot fudge, place remaining hot fudge into microwave safe bowl or glass measuring cup. Microwave for 1 minute. Stir. Spread over pie to cover the peanut butter layer. Refrigerate until serving time. Just before serving, spread the remaining whipped topping over hot fudge layer, being careful not to mix the two layers. * Place 2 tablespoons of hot fudge in a baggie and knead for a few seconds. Cut a tiny hole in the corner of the bag and drizzle over pie.
