After a rough night, the teams make their way back to the dorms. Jessica is still tearful over Wendy’s departure. Whereas the Red team actually seems pretty pleased that Jeff quit on them. Elsewhere, Ralph helpfully advises Andrew to start keeping his mouth shut and just focus on work. The next morning, Scott and Mary Ann rouse the teams at 6:58am and order them to the kitchen. They begin to teach everybody kitchen prep. Slicing, dicing, chopping vegetables, herbs, meat and whole fish and fowl. Chef Ramsey arrives and leads the teams out to the dining room for a lesson on setting the perfect table from Jean Philippe. However, the teams don’t pay much attention to the lesson. After Jean Philippe has set a perfect table, Chef Ramsey comes over and destroys it before presenting the next challenge. The teams will have five minutes to put six perfect place settings on a table, and whichever team makes the fewest mistakes will win. Both sides get to work. Since they weren’t carefully listening to Jean Philippe, it’s not easy. With time running out, the teams race to finish the settings. Chef Ramsey examines the Red table first and finds four mistakes. A sloppy job. Over on the Blue table, he finds only one mistake. The Blue team wins. As a punishment, the Red team has to polish every piece of dinnerware, glassware and silverware for tomorrow’s dinner service. Conversely, the Blue team is rewarded with massages and spa treatments in the dorms. Morning comes and the teams assemble in the kitchen at 7am. Chef Ramsey quickly informs the teams that he’s adding two items to that night’s menu, frog legs and pigeon. Chef Ramsey demonstrates how to dress pigeon by taking a whole bird, defeathering it, chopping off the head and removing the guts. The teams then have to prep their own frog legs and pigeon for the evening’s service. The Blue is supremely confident as they chop and cleaver. Over in the Red kitchen, however, Elsie is struggling to come to grip with dressing a complete animal. Forty-five minutes before the dining room opens, Chef Ramsey calls a quick meeting. He announces that the first team to serve all their tables tonight will be safe from elimination. But that’s not all. Because they lost the place setting challenge earlier, the Red team has to set the dining room. Which means that they won’t have time to prep for service. Ten minutes before the doors open, the Blue team is completely prepared, while the Red team is still setting tables. They finish and rush back to their kitchen to catch up. Back in the Blue kitchen, Andrew is a little shaky on the garnishes for each dish. Ralph quickly walks him through the menu. The first diners begin filing in and the first orders aren’t far behind. The Red kitchen starts working on their first orders, with Elsie running the meat station tonight. On the other side, Mary Ellen presents her first starters, which meet Chef Ramsey’s approval. And the customers’ as well. In the Blue kitchen, Ralph pulls out a perfectly done Wellington for the first main course to be served. Jessica asks if she can take to the hot plate. Ralph agrees, but then sees Chef Ramsey give Jessica all of the credit. But then Chef Ramsey calls out for a salmon and a bass, Andrew, completely lost, brings him garnishes for Beef Wellington. Ninety minutes into service, the Blue team has served almost all of their appetizers and some of their main courses. Meanwhile, Elsie has delivered the Red team’s first main course to the hot plate. But Jimmy drops the ball with a cold garnish. Chef Ramsey tears into him, but Jimmy just rolls with the criticism. Over on the Blue side, Ralph is serving his team’s first desserts. But they still have twelve tickets to serve, and Andrew is still struggling with the garnishes. Chef Ramsey chews him out, but when Andrew keeps his mouth and doesn’t talk back, Chef Ramsey is impressed that the discipline is finally settling in. The Blue kitchen is down to ten tickets. The Red team still has twelve. Elsie has to get moving. The good news is, Chef Ramsey is very impressed with a Beef Wellington that she cooked. With an hour left in service, the Blue kitchen only has five tables remaining. But one table has sent back their risotto, complaining that it’s mushy. Chef Ramsey samples it, agrees, and then angrily orders Mary Ellen to start over and do it right this time. And nobody else will be served until this table is completed. The Red kitchen is down to only six tickets and is picking up the pace. The Blue kitchen fixes their risottos and start up again, except…Mary Ellen forgot the tuna starter for a ticket. The other two completed starters are junked and the ticket is restarted. Meanwhile, the Red team has only four tickets remaining. Then two. Then one. Then…none. The Red team is safe from elimination. Chef Ramsey orders the Blue team to shut down the kitchen. Later that night, Chef Ramsey addresses the team. He lauds the Red team for not only setting the entire dining room, but also being able to serve all of their diners. Chef Ramset then congratulates Jessica for a job well done tonight and asks her to name two teammates for elimination. After some time for Jessica to deliberate, the teams are brought back to the dining room. Jessica nominates Andrew and Mary Ellen. After hearing each person’s explanation for why they think they should stay, Chef Ramsey decides to eliminate Mary Ellen. Then he warns Andrew that he was quite lucky to survive once again. I think Jean Philippe was being long, drawn out and boring on purpose to see how well the teams paid attention when it came time to set their tables. I was really impressed with the Red Team. Even after they lost time having to set all the dining room tables, they still completed all of their tickets. Mary Ann blew it for the Blue Team and Jessica was shocked Chef Ramsey gave her the axe and not that smart-ass Andrew. Even though Jessica talked about putting Ralph up for elimination, I knew she wouldn't. He's basically keeps the Blue Team's kitchen running smoothly.

I think Jean Philippe was being long, drawn out and boring on purpose to see how well the teams paid attention when it came time to set their tables. I hope so. I'd hate to think he'd go on and on like that even if there was no quiz. I mean, just how much is there to say about setting the table? I think a 30 minute speach would be sufficient. Just how long did JP go on about the setting anyway?

I wonder why Mary Ellen thought she would be safe? I guess because she and Jessica had become friends, but it was pretty silly of her to think she wouldnt be nominated when she screwed up the way she did. But I think Andrew should have gone this week.
